Harvest Loaf

Serves 12


  • 1¾ c all-purpose flour, sifted
  • 1 t baking soda
  • ½ t salt
  • 1 t ground cinnamon
  • 1 t ground nutmeg
  • ¼ t ginger
  • ¼ t ground cloves
  • ½ c butter
  • 1 c sugar
  • 2 large eggs
  • ¾ c canned pumpkin (or more)
  • ¾ c semisweet chocolate chips
  • ¾ c chopped walnuts (optional)


Preheat oven to 375 °F. Grease bottom of 9 x 5-inch loaf pan. Combine flour with soda, salt and spices. In a large bowl, cream butter. Gradually add sugar and cream well. Blend in eggs; beat well. At a low speed, add dry ingredients, alternately with pumpkin, beginning and ending with dry ingredients. Stir in chocolate chips and nuts. Pour into loaf pan and bake for 6075 minutes. Cool. Remove from pan.

Let stand for a least 6 hours before slicing (really?).
